I don’t have the conclusive research, but I’m pretty sure that every vegetable tastes better when roasted. So it should be no surprise that when I needed to cook a vegetable last week, I chose to roast it.  Since I was serving pasta, I decided to have the side dish be a classically roasted broccolini.

 

Roasting is GREAT for veggie sides to accompany pasta because your stovetop is often overcrowded by the sauce pan and the pot for boiling pasta water, so you can use the oven and cook everything at the same time!

I hadn’t cooked this vegetable in about a year, but this little recipe is a HIT!  This was literally the best broccoli in I’ve ever made, top 3 I’ve ever eaten.

  1. Preheat oven to 425. 1. Coat broccolini with olive oil, salt, minced garlic, and the juice of 1 quarter of the lemon.



    2. Spread broccolini on on a foil-lined sheet pan.



    3. Place the other lemon wedges near the broccolini so it roasts together.



    4. Roast for 20-22 minutes, until stalks are softened and slightly browned.



    To serve, you can pep up the flavor by squeezing a little roasted lemon juice on top of the broccolini.
